Ingredients for 2 servings:
- 6 heirloom carrots, yellow
- ½ bell pepper(s), red
- ½ onion(s)
- 1 tbsp oil
- 50 ml water
- 1 tbsp carrot greens, fresh, chopped
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
with carrot tops, vegan
Clean and wash the carrots, and peel if necessary. Then cut into pieces. Deseed, wash, and dice the bell peppers. Peel and dice the onion. Sauté the onions in oil. Add the vegetables. Pour in water. Sauté for 10-15 minutes, depending on the size of the pieces. Add spices and carrot tops to taste. Serve warm. A great side dish.
