Yellow Spelled Knöpfle with Durum Wheat Semolina

The perfect yellow spelled knöpfle with durum wheat semolina recipe with a picture and simple step-by-step instructions.

  • 500 g Spelled flour
  • 5 Eggs
  • 1 tbsp Turmeric
  • 1 tbsp Salt
  • Natural carbonated mineral water
  • 5 tbsp Durum wheat semolina
  1. Whisk flour, eggs, turmeric, salt, durum wheat semolina with (always sip white) mineral water well! Until a viscous dough is formed that slowly runs off the spoon!
  2. Heat salt water in a large saucepan and scrape / press through in portions with a spaetzle scraper / press!
  3. The knobs immediately sink to the bottom of the pot. Stir gently so that the knöpfle rise! Let it boil and switch back immediately! Let it steep for about 5 minutes! Take the knöpfle out of the water, place in a colander and rinse in cold water for a moment!
  4. Repeat until the batter is gone! Keep buttons warm in the oven!
  5. I always cook them the day before and briefly add them again to hot salted water or toss them briefly in a pan with melted butter!
  6. DURUM WHEAT semolina makes a nice bite!
