Yellow Spelled Knöpfle with Durum Wheat Semolina
The perfect yellow spelled knöpfle with durum wheat semolina recipe with a picture and simple step-by-step instructions.
- 500 g Spelled flour
- 5 Eggs
- 1 tbsp Turmeric
- 1 tbsp Salt
- Natural carbonated mineral water
- 5 tbsp Durum wheat semolina
- Whisk flour, eggs, turmeric, salt, durum wheat semolina with (always sip white) mineral water well! Until a viscous dough is formed that slowly runs off the spoon!
- Heat salt water in a large saucepan and scrape / press through in portions with a spaetzle scraper / press!
- The knobs immediately sink to the bottom of the pot. Stir gently so that the knöpfle rise! Let it boil and switch back immediately! Let it steep for about 5 minutes! Take the knöpfle out of the water, place in a colander and rinse in cold water for a moment!
- Repeat until the batter is gone! Keep buttons warm in the oven!
- I always cook them the day before and briefly add them again to hot salted water or toss them briefly in a pan with melted butter!
- DURUM WHEAT semolina makes a nice bite!
