Yellow Thai Curry

Ingredients for 2 servings:

  • 1 chicken breast
  • ½ onion(s)
  • 1 clove(s) garlic
  • 250 g spinach, frozen
  • ½ can of corn
  • 2 tbsp curry paste, yellow
  • ½ can coconut milk
  • 100 ml white wine
  • 2 tsp peanut butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chicken breast into thin strips and dice the onion. First, sauté the onion in a little oil until translucent, then add the meat and fry until lightly browned. Then add the thawed spinach and corn and fry for 2 minutes. Deglaze everything with the white wine. Add the coconut milk and bring to a boil. Dissolve the paste and peanut butter in it. Season with salt. Serve with wide glass noodles. Potatoes or rice are also good.
