Pork fillet, Italian

Ingredients for 2 servings:

  • 200 g pork fillet(s)
  • 2 can/n tomatoes, chunky
  • 2 onions (vegetable onions)
  • 4 cloves garlic
  • Salt
  • pepper
  • 200 g cheese (gratin cheese, grated)
  • Oil (olive oil) for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the pork fillet into medallions and fry briefly in olive oil. Remove from the pan and place in a baking dish. Make sure that the pork fillet is not cooked through, but only lightly browned. Dice the onions and fry in the olive oil until golden yellow. Add the crushed garlic and brown again briefly. Then add the chopped tomatoes and simmer over low heat until slightly thickened. Season well with salt and pepper. Then pour this into the baking dish, over the medallions. Sprinkle with the gratin cheese and bake at 180°C (fan oven) until a golden yellow crust has formed (20-30 mins). Serve with warm baguette. I place the baguette in the oven next to the baking dish about 5 minutes before the end of the baking time. Then cut into slices and serve with the dish. Enjoy.
