Ingredients for 3 servings:
- 1,000 g carrot(s)
- 100 ml sweet cream
- some sugar
- some broth, granulated
- Salt
- Pepper, white
- some butter
Instructions

Swabian carrot mash
Peel the carrots and cut into approximately 3 cm long pieces. Halve or quarter them if necessary, depending on the thickness of the carrots. Heat the butter in a saucepan, add the carrots, and sauté thoroughly. Season with sugar, salt, and pepper. Pour in a cup of water and stir in the granulated broth. Simmer gently for about 15 minutes. The water should be completely reduced. When the carrots are soft, puree them with a hand blender and stir in the cream. Serve with spaetzle and sausages (Wiener sausages).
