Ingredients for 1 servings:

  • 1 egg yolk
  • 1 tbsp, levelled sugar
  • 20 ml Marsala, white wine, red wine or juice

Instructions

Set the temperature to 90°C and whisk all ingredients at speed 5. When the temperature reaches 60°C, press the P button until the machine stops beeping. Then whisk for another three minutes until the mixture is fluffy. Turn off the heat and continue whisking until the temperature reaches 40°C. Serve immediately.
