Zefir Russian Dessert

The perfect zefir russian dessert recipe with a picture and simple step-by-step instructions.

  • 27 g Gelatin
  • 500 g Sugar
  • 150 ml Water
  • 1 packet Vanilla sugar
  • 1 packet Baking powder
  • 1 tbsp Freshly squeezed lemon juice
  1. Dissolve gelatine in 50 ml water and bring to the boil briefly. (2 min)
  1. Dissolve sugar in 100 ml water and bring to a boil. Simmer on a low flame for approx. 7-8 minutes. Then take it off the stove and let it cool down for 5 minutes.
  1. Beat the sugar water and gelatin in a mixing bowl with the mixer for 5 minutes on a low level. After 5 minutes add the lemon juice and mix for another 5 minutes.
  1. After 10 minutes add baking powder and vanilla sugar and mix for 3 minutes. Then place in a piping bag and 4-5 cm diameter molds on a baking sheet lined with baking tray. Sprinkle with powdered sugar and refrigerate for 4 hours or more. Those who want softer Zefir take 18 grams of Gelanitine. You can also color them.
