Zittau potato pancakes

Ingredients for 4 servings:

  • 1,200 g potatoes
  • 500 g minced meat, mixed
  • 1 large onion(s)
  • 3 eggs
  • a few stalks of parsley
  • 3 tbsp cornstarch
  • 1 tsp salt
  • ½ tsp pepper
  • some nutmeg
  • possibly marjoram
  • Oil, for frying

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Minced meat – potato pancakes

Grate the potatoes, finely dice or grate the onion, finely chop the parsley, and add to the potatoes. Add the eggs, starch, and seasonings and mix well. Tear the minced meat apart a bit, add it to the potato mixture, and mix well. Heat the oil in a pan and add a tablespoon of the pancakes, pressing them down slightly. Fry until golden brown on each side. If desired, make a few test pancakes and adjust the seasoning if desired. This goes perfectly with a delicious salad.
