Ingredients for 4 servings:
- 600 g jacket potatoes (or leftover boiled potatoes)
- 300 g meat, cooked or fried leftovers
- 1 large onion(s), chopped
- 8 eggs
- 60 g butter or margarine
- 100 ml cream or condensed milk
- salt and pepper
Instructions

Slice the leftover boiled potatoes (or boil the jacket potatoes and then slice them) and fry them in butter or margarine until lightly browned. Add a little salt and pepper. Cut the meat into small cubes and fry them with a chopped onion in a little fat in a second pan. Add the potatoes to the meat and mix well. Beat the eggs with a dash of condensed milk or cream, add a little salt and pepper, and pour over the potato and meat pan, letting it set like an omelet. We like to serve it with a green salad—or, if you want it to cook even faster, serve it with some good pickled gherkins. This is a popular recipe for using up leftovers!
