Zoodles with Bolognese

Ingredients for 2 servings:

  • 800 g pitted zucchini
  • 1 jar tomato sauce
  • 200 g minced beef
  • salt and pepper
  • 1 m.-sized onion(s)

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Low carb – suitable for a low-carbohydrate diet

Slice the zucchini into thin strips, preferably with a food processor, or slice it with a vegetable peeler. Then cut it into fine spaghetti and set aside. Don’t be surprised if the mixture collapses while cooking. Heat enough water in a large pot. Dice the onion and fry in a pan until translucent. Then add the minced meat, season, and fry until crumbly. Meanwhile, add the zucchini and salt to the boiling water. After 4-5 minutes, drain the zucchini and season again with salt. Add a jar of tomato sauce to the minced meat and heat briefly. Serve the zucchini spaghetti with the sauce and sprinkle with Parmesan or grated cheese. This is a quick recipe; however, without a food processor, it can take up to 30 minutes to grate the zucchini. The rest goes quickly, though.
