Zucchini and minced meat meatballs

Ingredients for 4 servings:

  • 1 roll, from the day before
  • 1 onion(s)
  • 125 g zucchini
  • 500 g minced meat
  • 1 egg(s)
  • salt and pepper
  • 150 ml meat broth
  • 150 g crème fraîche
  • 2 tbsp ajvar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Soak the bread rolls in lukewarm water. Peel and finely dice the onion. Wash and grate the zucchini. Place the minced meat, egg, onion, and zucchini in a bowl. Squeeze out the excess water from the bread rolls and add it, season with salt and pepper, and knead everything into a smooth dough. Form 12 meatballs from the mixture. Fry the meatballs in a pan on both sides, remove from the pan, and keep warm. Pour the stock into the pan, stirring to loosen the pan juices. Then stir in the crème fraîche and ajvar and simmer for 3 minutes. Add the meatballs and serve. Serve with country potatoes or croquettes.
