Zucchini and minced meat pan with curry

Ingredients for 3 servings:

  • 1 m.-large zucchini
  • 2 medium-sized onions, cut into half rings
  • 1 red chili pepper(s)
  • 500 g minced meat, mixed
  • 300 ml tomato ketchup
  • 50 g bacon, diced
  • 1 tbsp oil
  • salt and pepper
  • curry powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat oil in a pan, fry the bacon, add the onions and cook until translucent. Add the minced meat and fry until crumbly, stirring constantly. Season with salt and pepper. Wash the zucchini, halve it and remove any seeds with a spoon. Cut unpeeled into half rings and add to the lightly browned mince. Remove the seeds from the chili pepper and chop finely, then add. Fry over medium heat for about 5 minutes. Now add a bottle of pure tomato ketchup (unseasoned), fill the bottle with water and add this too. Season to taste with about 1 tbsp curry and salt and pepper if desired. Simmer for another 5 minutes. Serve with rice.
