Zucchini and minced meat pan with feta

Ingredients for 4 servings:

  • 1 medium-sized onion(s), finely diced
  • 500 g zucchini
  • 2 cloves garlic, finely chopped
  • 400 g minced beef
  • 1 tsp salt
  • some pepper, black, freshly ground
  • 1 tsp, levelled Allspiceón de la Vera (smoked, hot paprika powder)
  • 1 tbsp oregano
  • 150 ml red wine, dry
  • 200 ml tomatoes, pureed
  • 1 can tomatoes, peeled or chopped
  • 150 g feta cheese, crumbled
  • e.g. parsley, flat, freshly chopped

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and dice the onion, wash, halve, and slice the zucchini, peel and finely chop the garlic. Place the ground beef in a non-stick pan and flatten it, then heat the pan and brown the mince. Add the diced onion and fry briefly. Set the mince aside and briefly fry the zucchini slices. Add the garlic, salt, pepper, paprika, and oregano and mix thoroughly. Deglaze with the red wine and simmer slightly. Add the passata and the peeled or diced tomatoes and simmer for a few minutes. Turn off the heat and crumble the feta cheese over the mixture, cover, and let stand for a few minutes. Sprinkle with freshly chopped flat-leaf parsley, if desired, and serve in the pan. Penne or rice goes very well with this.
