Zucchini and minced meat pot

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 kg zucchini
  • 2 tsp oil
  • 500 g minced meat
  • 2 can/n tomatoes, chunky
  • salt and pepper
  • garlic powder
  • Paprika powder
  • 2 cubes vegetable stock, instant
  • 1 liter of water
  • e.g. rice as a side dish

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the zucchini and cut into small pieces, then set aside. Peel the onions, cut into quarters, and sauté in oil until translucent. Add the minced meat to the onions and fry. Add the zucchini and sauté briefly. Add the tomatoes and vegetable stock, and stir everything together. Season with the spices and simmer for 20 minutes on medium heat. Cook the desired amount of rice according to the package instructions. You can then mix the rice with the vegetables or serve it separately.
