Zucchini and mozzarella rolls

Ingredients for 1 servings:

  • 1 m.-large zucchini
  • 100 g breadcrumbs
  • 100 g cooked ham
  • 125g mozzarella
  • 50 ml olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 27 minutes

Wash the zucchini and cut into six slices. Dip the slices in olive oil, wipe off any excess oil with your fingers, then coat in breadcrumbs. Place the slices on a baking sheet and bake at 160°C for five minutes. Then place a slice of ham and mozzarella on top of the breaded zucchini and tightly roll the slices. To ensure they stay in place, thread three rolls onto a skewer. Then finish cooking in the oven at 180°C for another 12 minutes.
