Zucchini baked with raclette cheese

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 onion(s)
  • 6 slices of raclette cheese
  • some butter or margarine
  • 2 tsp soy sauce, spicy
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Dice the onion. Halve the zucchini and cut into thin slices. Remove the rind from the raclette cheese. Sweat the diced onion in a shallow pan with a little butter until translucent. Reduce the heat to medium, then sauté the zucchini slices in a little water with the lid closed for about 10 minutes. Then season with salt and pepper and add the soy sauce to taste. At the lowest heat, spread the raclette slices evenly over the zucchini, cover, and let the cheese melt. Once the cheese has melted, serve in deep plates.
