Ingredients for 1 servings:
- 200 g whole wheat flour
- 40 g oat flakes
- 2 tsp baking powder
- ½ tsp salt
- 50 g margarine (semi-skimmed), melted
- 2 eggs
- 125 ml buttermilk
- 500 g zucchini, grated
- 50 g bacon, diced (if it doesn’t have to be vegetarian)
- ½ onion(s), chopped
- 1 garlic clove(s), crushed
- Sage, chopped
- Oregano, chopped

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
with a hearty dough
Grate the zucchini and then steam until any liquid is reduced. Sauté the herbs, onion, garlic, and bacon pieces. Using a dough hook, make a dough from the remaining ingredients. Add the herb mixture and the cooled, steamed zucchini. Line a 26 cm springform pan with baking paper. Pour the dough mixture into the pan. Preheat the oven to 200 degrees Celsius and bake the zucchini cake for 35 minutes.
