Ingredients for 1 servings:
- 500 g zucchini
- 200 g cheese, grated, e.g. Edam or Gouda
- 100 g breadcrumbs
- 50 g flour
- ½ pack of baking powder
- 4 eggs, whisked
- 150 g yogurt
- salt and pepper
- possibly nutmeg
Instructions
Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Coarsely grate the zucchini, season with salt, and let it soak for 15 minutes. Then squeeze out any excess water. Add the cheese and mix. Then mix in the eggs and yogurt. Mix the breadcrumbs, flour, and baking powder, then add to the zucchini mixture. Season with salt and pepper and mix well. Preheat oven to 200 degrees Celsius (top/bottom heat). Grease and flour a round baking sheet (23-24 cm). Add the zucchini batter and bake for about 30-35 minutes, until golden brown. Remove the baked pie from the oven and let it rest for a few minutes. Serve. Tip: Cooked ham or bacon can also be added to the batter.
