Ingredients for 1 servings:
- 3 eggs
- ½ tsp salt
- ¼ tsp pepper
- 3 tsp oregano, shredded
- 100 g Emmental cheese, grated
- 200 g wheat flour type 405
- 500 g zucchini, finely grated
- 80 g bell pepper(s), red, finely diced
- 1 tsp baking powder
- Butter for the molds
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Crack the eggs into a mixing bowl, add salt, pepper, and oregano, mix, and beat with the whisk of a food processor until fluffy. Then add the grated zucchini and mix in. Add the diced bell pepper and mix. Stir in the grated cheese. Mix the flour and baking powder well and mix everything evenly into the mixture. Preheat the oven to 180 degrees (top and bottom heat). Grease the 12-hole muffin tin thoroughly with butter. Fill the holes with the batter and place the tin in the preheated oven. Bake for 30 to 35 minutes, until the outside is golden brown. Once baked, remove the tin from the oven, let it cool slightly, and then carefully remove the muffins from the tin. Serve the muffins decoratively.
