Ingredients for 12 servings:
- 150 g flour
- 100 g flour (wholemeal flour)
- ½ tsp baking soda
- 7 g baking powder
- 1 tsp, smothered cinnamon
- ¼ tsp nutmeg
- 60 g chocolate, chopped
- 2 eggs
- 130 g brown sugar
- 90 ml oil
- 170 g buttermilk
- 150 g zucchini, grated
- Cake icing
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat oven to 160°C (325°F). Combine flour, baking powder, baking soda, chocolate, and spices. In another bowl, whisk the eggs. Stir in the sugar, oil, buttermilk, and zucchini. Then add the flour mixture and whisk until well-combined. Pour batter into muffin cups and bake for about 20-25 minutes. Drizzle lemon or vanilla glaze over the cooled muffins.
