Ingredients for 1 servings:
- 1 pkt. puff pastry, rolled out (refrigerated section, but also frozen)
- 1 onion(s), diced
- 1 bell pepper(s), diced
- 250 g mixed vegetables (frozen, alternatively fresh such as mushrooms, carrots, zucchini), diced
- 1 egg(s)
- 50 g cream cheese with pepper pieces
- 50 g mountain cheese, diced
- 4 slice(s) ham, raw
- 1 tbsp herbs (frozen)
- salt and pepper
- Olive oil for frying
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Spread the rolled-out puff pastry on a baking sheet lined with baking paper. Preheat the oven to 200°C. Fry the diced onion in hot olive oil, add the diced bell peppers and fry briefly. Add the frozen vegetables and continue to fry over medium heat, stirring occasionally, until the vegetables are heated through. Meanwhile, in a bowl, beat the egg with the cream cheese. Add the mixed herbs and cheese cubes. Stir and season with salt and pepper. Add the vegetables to the sauce and mix well. Line the center of the puff pastry sheet with the ham and top with the sauce and vegetable mixture. Fold the two long sides of the pastry over each other and seal the ends. Bake in the preheated oven on the middle rack for approx. 25 minutes, until the strudel is golden brown. Delicious on its own or with salad as a main course. Can also be eaten as a side dish, for example, with pork steaks. Tips: The spicier the mountain cheese, the more tangy the strudel will be. Paprika cream cheese adds extra flavor to the filling, but any other cream cheese can be used. Frozen vegetables can also be substituted with any other leftover vegetables you have in your fridge.
