Ingredients for 1 servings:

  • 3 kg zucchini
  • 1 kg onion(s)
  • 1 kg sugar
  • 3 tbsp mustard
  • 3 tbsp curry powder
  • 2 tbsp spice mix (Chinese)
  • 1 liter herbal vinegar

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 30 minutes

Dice the zucchini and finely dice the onion, mix with a handful of salt, and let it steep overnight. The next day, drain the resulting liquid, add the sugar and vinegar, and simmer for about 20 minutes. Stir in the remaining ingredients. Pour into sterile jars while still hot. If you prefer a less sweet taste, reduce the sugar; if you prefer a spicier taste, add more Chinese spice.
