Zucchini Compartments on Stewed Tomatoes

The perfect zucchini compartments on stewed tomatoes recipe with a picture and simple step-by-step instructions.

  • 2 Zucchini fresh
  • 150 g Cheddar cheese
  • 100 g Lean bacon, sliced
  • Seasoned salt from my KB
  • 8 Tomatoes
  • 1 tbsp Olive oil
  • 1 tbsp Rosemary, sage, thyme …
  • 1 Fresh shallot
  • 1 Splash Vinegar
  • 1 pinch Sugar
  • 1 pinch Garlic pepper from my KB
  • 1 tsp Crushed red pepper
  1. Clean and wash the zucchini and cut each 1 cm apart and be careful not to rush through with the knife! 🙂 Cut the cheese and bacon into 3cm / 3cm slices and insert one slice into each slot.
  2. Wash tomatoes, cut in half, remove the stalk and dice. Peel and dice shallot. Wash and chop herbs!

Preheat the oven to 200 degrees!

  1. Mix the diced tomatoes with the oil, vinegar, herbs, shallot, garlic pepper, sugar and Pul Biber and place in a baking dish. Put the zucchini on top. I halved the zucchini in the middle so that they fit better into the shape! 🙂
  2. Sprinkle the zucchini with seasoned salt again and bake in the oven for about 15 minutes, then grill over another 10 minutes with top heat!
  3. If you don’t make low carb, you will definitely enjoy rice or potatoes! 🙂
