Ingredients for 2 servings:
- 1 zucchini
- e.g. vegetable broth
- 2 tbsp cream cheese
- salt and pepper

very simple and quick to prepare soup
Wash the zucchini and cut into small quarters. Place them in a saucepan and add enough broth to cover the zucchini pieces (about a thumb’s width). Cook the zucchini for about 10-12 minutes until soft. Then place everything in a blender, add the cream cheese, and blend for about 1 minute (you can also use an immersion blender). Add a little more broth if desired—depending on the consistency you want—and season with salt and pepper. Serve in soup bowls. Tip: Garnish with a dollop of whipped cream, if desired.
