Ingredients for 2 servings:
- 150 g zucchini
- 1 onion(s)
- 1 garlic clove(s)
- 1 tbsp olive oil
- 1 tbsp cream cheese (Brunch Paprika&Pepper)
- 1 roll
- 20 g Parmesan
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean the zucchini and cut into large cubes. Finely dice the onion and finely chop the garlic clove. Sauté the zucchini, garlic, and onion in olive oil and season with salt and pepper. Take 2 tablespoons of the mixture and set aside. Mix the zucchini mixture with the brunch in the pan and mash everything with a potato masher. Cut the bread roll in half. Spread the zucchini-brunch mixture on the two bread roll halves and arrange the reserved vegetables on top. Sprinkle with Parmesan cheese and serve. If you like, you can also bake the bread roll in the oven beforehand until nice and crispy; it tastes even better.
