Zucchini-Feta-Muffins

Ingredients for 3 servings:

  • 300 g zucchini
  • 2 eggs
  • 100 g feta cheese
  • 150 g flour
  • 2 tbsp milk
  • 1 tsp baking powder
  • Oil or butter for greasing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Hearty starter or vegetarian main course

Grate the zucchini with the skin on, crumble the feta, and mix well with the zucchini and eggs. Stir in the flour and baking powder, adding enough milk if needed to create a thick, sticky mixture. Pour into greased muffin tins (silicone ones are particularly good) or small tartlet tins (enough for 6) and bake in a preheated oven at 190°C for 30 minutes. Remove immediately from the tin and serve hot. Delicious with salad and ideal as a starter.
