Zucchini fritters with herb yogurt

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 tsp salt
  • 2 eggs
  • 80 g flour
  • n. B. Pfeffer
  • n. B. herbs
  • some oil for frying
  • 500 g natural yogurt
  • 1 tsp Italian herbs
  • 1 pinch of paprika powder
  • 1 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

To make the zucchini fritters, grate the zucchini into medium-sized sticks using a grater. Add the salt to the zucchini sticks and mix. Set the mixture aside for at least 30 minutes to drain the water from the zucchini. Squeeze out any excess water and mix the remaining zucchini mixture with the eggs, flour, and spices and herbs of your choice. Heat a pan with oil. Using a tablespoon, drop the batter into the pan and fry the zucchini mixture in pieces. Place the finished fritters on a kitchen towel to absorb the excess fat. Mix the natural yogurt with the herbs, paprika, and lemon juice and serve with the zucchini fritters. Tip: I also like to add a little feta or grated cheese to the zucchini mixture. This adds even more flavor.
