Zucchini jam with oranges

Ingredients for 1 servings:

  • 1 ½ kg zucchini
  • 3 large oranges
  • 2 lemons
  • 2 kg gelling sugar, 2:1

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the zucchini, halve it lengthwise, then hollow it out, then finely chop it in a food processor. Place it in a saucepan along with the juiced oranges, stir in the squeezed lemons and preserving sugar, and bring to a boil, stirring constantly. Simmer for about 5 minutes. Test for setting. Then pour into the prepared jars and let cool upside down.
