Zucchini noodles with carrots and feta

Ingredients for 2 servings:

  • 1 large zucchini
  • 10 small carrots
  • 10 cherry tomatoes
  • 100 g feta cheese
  • 1 tbsp oil
  • salt and pepper
  • Herbs, Italian

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, slice the carrots and sauté them in a little water. Spiralize the zucchini into noodles using a spiralizer and add them to the pan with the carrots. Quarter the tomatoes and add them. Once the water has evaporated and the carrots are al dente, season with salt, pepper, and the Italian herbs. Finally, add the feta and cook until it has melted.
