Ingredients for 1 servings:
- 400 g sugar
- 6 eggs
- 2 packets of vanilla sugar
- 500 g margarine
- 1 tsp cinnamon
- 1 pinch of salt
- 50 g chocolate, melted
- 520 g flour
- 2 packets of baking powder
- 500 g hazelnuts, ground
- 600 g zucchini
- n. B. Chocolate for spreading
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
Halve the zucchini, remove the seeds, and finely grate. Then beat the eggs with the sugar, vanilla sugar, and margarine until frothy. Now add the melted chocolate and beat again. You can choose the chocolate according to your taste. You can vary the quantity as desired. Just remember that you will need more flour if you use more chocolate. Now add the ground nuts, pinch of salt, cinnamon, and grated zucchini and mix everything together with a mixer. Now pour the chocolate mixture onto the zucchini and mix. Then carefully fold in the flour and baking powder. Spread the batter evenly on a baking tray lined with baking paper, making sure not to go too close to the edges. Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for 45-50 minutes. Do the skewer test after about 45 minutes. Bake for 5-10 minutes longer if necessary. The baking time varies depending on the oven. After the cake has cooled, cover it with chocolate and cut it into pieces after a few hours.
