Ingredients for 4 servings:
- 2 zucchinis
- 6 slices of Parma ham, San Danielle, Serrano or similar ham
- 2 cloves garlic
- 1 tsp oregano, fresh
- 2 tbsp oil (olive oil)
- 2 tbsp balsamic vinegar
- Salt
- White pepper, freshly ground
- Parmesan or Grana Padano, freshly grated
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Wash and trim the zucchini, and cut each into 6 slices lengthwise. Blanch in boiling salted water for about 2 minutes and then refresh in cold water. Press the garlic through a press, mix with oregano, olive oil, balsamic vinegar, salt, and pepper. Brush the zucchini slices with the sauce and top each with a halved slice of ham. Sprinkle with cheese, roll up, and place on a toothpick. This makes a nice little appetizer, and (in larger quantities) makes an ideal party snack, and is also suitable for an antipasti/tapas buffet.
