Zucchini, pepper, and onion relish

Ingredients for 1 servings:

  • 800 g onion(s)
  • 600 g bell pepper(s)
  • 2 kg zucchini
  • ½ tbsp vinegar
  • ½ tbsp turmeric
  • ½ tbsp pepper
  • 2 tbsp cornstarch
  • 1 tbsp mustard seeds, ground
  • 1 tsp nutmeg
  • 600 g sugar
  • 3 tbsp salt
  • 1 chili pepper(s) (to taste)

Working time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Wash the bell peppers, chili pepper, and zucchini. Peel the onion. Finely grate the zucchini and onions. Finely chop the bell peppers and chili pepper. Toss the chopped and grated vegetables with 3 tablespoons of salt and let stand, discarding any excess water. Combine all ingredients in a large pot and cook for 10 minutes while stirring, then pour into jars. Makes 9 250 ml jars. The relish tastes best when left to infuse for a month.
