Ingredients for 4 servings:
- 1 kg bell pepper(s), red and/or yellow
- 2 tomatoes
- 2 garlic cloves
- 120 ml olive oil
- 125 ml water
- 2 tbsp vinegar
- 2 tbsp sugar
- 1 tbsp salt
- 1 bunch of spring onions
- pepper
- chili powder
Instructions
Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 30 minutes

Chop the bell peppers, tomatoes, and spring onions, and sauté them in a little olive oil. Peel and chop the garlic cloves and add them. Season with salt, sugar, and spices. Pour in the water, vinegar, and olive oil, and cook the bell peppers until soft. Blend everything to your liking using a hand blender. While still hot, pour into jars, close the lids, and cover with a cold, wet towel for about 30 minutes.
