Ingredients for 4 servings:
- 800 g zucchini
- ½ tbsp salt
- 2 tbsp oil
- 3 large eggs
- 4 tbsp cream
- 150 g cheese, grated (e.g. Gouda)
- pepper
- Butter, for the mold
- oregano
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Coarsely grate the washed and stemmed zucchini and place it in a bowl, sprinkle with salt, and let it stand for 30 minutes. Then pour the zucchini into a sieve and squeeze out any excess liquid. Mix the zucchini with the beaten eggs, oil, cream, and 2/3 of the cheese. Season with pepper and oregano. Transfer to a greased dish and smooth the surface. Sprinkle with the remaining cheese and bake in a preheated oven at 200°C for about 35 minutes. Serve warm or lukewarm.
