Ingredients for 2 servings:

  • 250 g flour
  • ½ tbsp dry yeast or 1/2 cube fresh yeast
  • 1 ½ tbsp natural yogurt
  • ¼ liter of water
  • possibly food coloring, red or yellow or saffron powder
  • 200 ml water
  • 3 tbsp honey or rose water
  • 250 g sugar
  • 2 cardamom pods without pods, if necessary
  • e.g. oil for frying

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Arabic sweets for Ramadan

Mix flour, yeast, yogurt, and 250 ml water to form a thick batter. Let it rest for about 1/2 hour. You can also let it rest longer (2-3 hours). If you like, you can color the water with food coloring or saffron. Make a thick syrup from sugar, honey or rose water, 200 ml water, and the cardamom. Test for doneness: Place a drop of the syrup on a plate. If it stays put, the syrup is ready. If it runs away, the syrup needs to be reduced further. Heat the oil. Transfer the batter to a piping bag fitted with a round nozzle. Place some of the batter in a spiral shape into the hot oil and fry until golden brown on both sides, then drain well. Then coat with sugar syrup.
