Ingredients for 12 servings:

  • 2 zucchinis
  • 2 tbsp olive oil
  • salt and pepper
  • 2 tomatoes
  • 25 g pine nuts
  • 40 g green olives, pickled
  • 100 g cream cheese
  • 1 pinch(s) of oregano

Instructions

Wash and dry the zucchini, and slice lengthwise into approximately 4 mm thin slices. Fry these slices in batches in olive oil over low heat for about 2 minutes on each side. This will make the slices pliable. Season the zucchini with salt and pepper, and let cool. Blanch the tomatoes in hot water, peel, deseed, and finely dice. Finely chop the pine nuts and olives. Mix the tomatoes, pine nuts, olives, and cream cheese. Season with salt, pepper, and oregano. Brush the zucchini slices with this mixture, roll them up, and secure with wooden skewers.
