Zucchini Salsa

Ingredients for 1 servings:

  • 500 g zucchini
  • 500 g bell pepper(s), colored
  • 500 g onion(s)
  • 250 ml oil
  • 1 liter tomato ketchup
  • 250 ml sauce (salsa sauce)
  • Salt
  • Cayenne pepper
  • Tabasco

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini and bell peppers and cut into small cubes. Finely dice the onions. Heat the oil in a large pot and briefly fry the diced vegetables. Add the ketchup, salsa, and a few drops of Tabasco. Season the mixture with salt and cayenne pepper. Simmer while stirring until the vegetables are tender (about 10 minutes). Immediately pour into hot, rinsed, twist-off jars and seal. Store in a cool place (in the cellar). This quantity makes about 7 jars! Tastes great with meat, grilled food, and as a spread.
