Zucchini sauce for pasta

Ingredients for 4 servings:

  • 500g penne
  • 100 g butter
  • 500 g zucchini
  • 4 tbsp Parmesan, grated
  • ½ tsp salt
  • 1 pinch of nutmeg
  • some rosemary
  • some oregano

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

vegetarian

Cook the pasta as usual. Dice the zucchini and cook with half a cup of water until tender. Then puree the zucchini pieces. While the sauce is simmering, stir in the butter, seasonings, and Parmesan cheese, and mix everything together. You may need to thin the sauce with a little more water if it’s too thick. Serve the pasta with the sauce and top with Parmesan cheese.
