Ingredients for 4 servings:

  • 750 g zucchini
  • 2 tbsp olive oil
  • 4 tbsp tomato paste
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 small chili pepper(s), more if needed
  • 300 ml cream
  • 2 tbsp fresh herbs, e.g. basil, thyme, oregano or herbs de Provence
  • 100 g Parmesan
  • possibly chili powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

quick, tasty, Mediterranean, with spaghetti or linguine

Coarsely grate the zucchini, peel and finely dice the onion, press or finely dice the garlic clove, and deseed and finely dice the chili pepper. Heat the olive oil in a large pan or wok and sauté the grated zucchini, onion, garlic clove, and chili pepper for at least 5 minutes. Push the vegetables to one side and lightly roast the tomato paste in the cleared center of the pan. Then mix everything together and top with cream. Season with pepper and salt and simmer for a few minutes. Finally, stir in the grated Parmesan cheese and season again to taste. If you like it a bit spicier, use 2 chili peppers or add a little more chili powder.
