Zucchini slices topped with feta cheese

Ingredients for 8 servings:

  • 2 zucchini, about 4 cm diameter, very firm
  • 4 tbsp olive oil
  • salt and pepper
  • 200 g mild feta cheese
  • 1 clove(s) garlic, finely chopped
  • 1 tsp herbs (Herbe de Porvence), lightly ground in a mortar
  • 2 tbsp olive oil
  • Olives, pitted, black

Cut the zucchini into slices about 15 mm thick, fry quickly on both sides in hot olive oil, and season with salt and pepper. They should not be cooked through yet, but should already be browned. Cut the cheese into 4 cm wide strips, halve crosswise, then cut into long triangles. Mix the oil with the herbs and garlic and marinate the cheese triangles for 1-2 hours. Place a cheese triangle on each zucchini slice, place the slices in an ovenproof dish, and drizzle with the marinade. Bake at 250 degrees Celsius for about 10-12 minutes, until the cheese has browned edges. Place an olive on each slice using a wooden stick. Delicious hot or cold.
