Ingredients for 4 servings:

  • 1 ½ kg zucchini
  • ¾ liter broth (homemade or instant)
  • 4 medium-sized onions
  • 150 g Black Forest ham
  • some oil
  • Parsley, chopped

Halve the zucchini lengthwise, then slice into slices and add to a pot with the broth. They don’t need to be covered, as they will absorb some of the water during cooking. Let them simmer for about 20 minutes. In the meantime, peel the onions and slice into rings, and cut the ham into thin strips. Don’t worry if there seem to be too many onions: fry them in a little oil until they reach a nice light to medium brown color. They will naturally shrink quite a bit during this process. Lightly fry the ham as well. When the zucchini are somewhat soft, puree them with a hand blender. Add a little more broth if needed. Stir the onions and ham into the soup. Season to taste, sprinkle with some chopped parsley, and serve. Be sure to season only after adding the ham, otherwise the soup will be too salty!
