Ingredients for 4 servings:
- 4 m.-large zucchini
- 1 onion(s)
- 1 tbsp curry powder
- 1 tsp curry paste, green
- 300 ml vegetable stock
- 250 ml coconut milk
- salt and pepper
- 1 tbsp peanut oil
Instructions

Wash the zucchini and chop into large pieces. Peel the onion and dice it into small cubes. Heat the oil and sauté the onion briefly, then add the zucchini. Add the curry powder and curry paste, and pour in the vegetable stock and coconut milk. Cook for about 10 minutes. Then puree and season with salt and pepper.
