Zucchini soup with Vienna sausages

Ingredients for 4 servings:

  • 1 kg zucchini
  • 1 onion(s)
  • 2 cloves garlic
  • 500 ml vegetable broth or meat broth
  • 1 cup sour cream
  • 6 sausages (Wiener)
  • some oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the zucchini and cut into slices or chunks. Peel and finely chop the onion and garlic, and sauté both in a little oil. Add the zucchini and vegetable or meat broth, and cook for 15-20 minutes. Add the sour cream and puree the soup. Thinly slice the Vienna sausages and add them to the soup. Let them simmer for a few more minutes. Season with salt and pepper, if desired. Serve with a baguette.
