Zucchini spaghetti

Ingredients for 4 servings:

  • 500 g zucchini
  • 1 large onion(s)
  • 1 bunch parsley, fresh
  • 2 cloves garlic
  • salt and pepper
  • ¼ liter vegetable broth
  • 200 g sour cream
  • 500g spaghetti

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash or trim the zucchini, onion, garlic, and parsley and roughly chop. Cook in the vegetable broth for about 10-15 minutes until soft. Let cool slightly, then puree everything thoroughly with a hand blender. Meanwhile, cook the spaghetti in plenty of salted water until al dente. Add the sour cream to the zucchini sauce and return to the pan. Once the spaghetti is cooked, arrange everything on plates and serve immediately. Tip: If desired, sprinkle with some grated Parmesan cheese.
