Mascarpone-Zucchini-Sauce

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 250 g zucchini
  • 2 tbsp olive oil
  • salt and pepper
  • 2 lemon(s), untreated
  • 250 g mascarpone
  • 60 g Parma ham

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and dice the onions and garlic, and sauté them in a pan with the oil. Wash the zucchini and cut them into thin strips. Add them to the pan and fry. Season well with pepper and a little salt. Cook for another 2 minutes (the zucchini should still have some bite). Zest both lemons and juice one lemon. Add the zest and lemon juice to the vegetables. Add the mascarpone and heat gently—do not boil. Finally, roughly tear the Parma ham and stir in. Serve this sauce with your choice of pasta.
