Ingredients for 1 servings:

  • 200 g zucchini (cleaned, washed and finely diced)
  • 1 onion(s) (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 2 tomatoes (peeled, diced)
  • 1 tbsp thyme
  • 1 tsp rosemary (chopped)
  • 1 tsp oregano
  • 1 tsp, leveled chili flakes
  • 1 tsp vinegar (red wine vinegar)
  • ½ tsp salt
  • Pepper, black from the mill
  • 1 tbsp olive oil
  • 75 g cream cheese (low-fat)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the oil in a pan. Briefly fry the zucchini, onion, and garlic. Add the chopped tomatoes, spices, and vinegar. Cover and cook over moderate heat for about 20 minutes. Then puree with a hand blender. Allow the puree to cool completely. Stir in the cream cheese evenly with a whisk. The spread should sit for a few hours before eating.
