Zucchini stuffed with minced meat

Ingredients for 2 servings:

  • 2 small zucchini
  • 250 g minced beef
  • 1 tsp vegetable broth, granulated
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • 70 g cheese, grated (Gouda)
  • 1 tsp paprika powder
  • salt and pepper
  • 2 tbsp parsley, chopped
  • ½ liter vegetable broth
  • some oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the zucchini and remove the seeds, creating a hollow. Combine the ground beef with the egg, breadcrumbs, Gouda cheese, parsley, and seasoning, and fill the zucchini with the meat mixture. Briefly fry the stuffed zucchini in a pan with a little oil, then place in a casserole dish. Add the vegetable broth and bake the zucchini for about 20 minutes at 180°C. Remove the zucchini halves from the broth and serve with rice or baguette. For those on a food combining diet, serve without a side dish and omit the breadcrumbs from the ground beef filling.
