Zucchini toast

Ingredients for 2 servings:

  • 2 slices of toast
  • 1 zucchini
  • 150 g cheese, Gouda in slices
  • 1 onion(s)
  • 1 tomato(s)
  • 2 eggs, fried
  • salt and pepper
  • margarine
  • Cream cheese or remoulade to spread on toast

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the zucchini crosswise and then slice lengthwise to create eight “rectangular” zucchini slices. Brown them on one side with onion slices in a little margarine. Turn them over, season with pepper and salt, and top with the cheese slices just before the end of the cooking time. The cheese should be melted when the zucchini slices are cooked. Spread the toasted bread slices with cream cheese or remoulade and place them side by side on two plates. Place a fried egg on each slice of toast, then salted and peppered tomato slices, and then the zucchini and cheese combination, all together if possible. The whole thing is extremely difficult to eat (knife and fork are mandatory), but absolutely delicious. It puts any “Strammer Max” to shame. (My husband can cook it on his own, too.)
