Pak Choi Curry Soup

Ingredients for 2 servings:

  • 1 pak choi
  • 2 cans of coconut milk
  • ½ liter broth
  • 3 mushrooms
  • 1 tbsp butter
  • ½ onion(s)
  • 1 bunch of spring onions
  • 1 tbsp curry
  • 1 tsp chili flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

vegetarian and with coconut milk

Cut the bok choy into thin strips. Chop the onions and mushrooms. Sauté the ingredients in a little butter until the onions and bok choy appear slightly translucent. Pour in the boiling vegetable stock and simmer briefly over medium-low heat with the lid on until the vegetables are tender. The vegetables should remain crunchy. Add the coconut milk. Season with curry and chili flakes to taste. Add the finely chopped spring onions. Simmer over low heat for a few minutes and serve. Tip: You can also add shrimp, crayfish tails, or finely chopped chicken with the stock.
