Ingredients for 2 servings:
- 2 large zucchini
- 2 tomatoes
- 250 g minced meat
- 150 g sheep’s cheese
- Allspice
- Ginger powder
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Zucchini halves with minced meat and tomato filling, topped with feta cheese
Preheat the oven to 200°C. Halve the zucchini lengthwise and scoop out the soft insides with a spoon, then shred them in a bowl. Dice the tomatoes and add them, seasoning with salt and pepper. Brown the minced meat in a pan and season with allspice and ginger. Add the zucchini flesh and tomatoes. Meanwhile, pre-bake the zucchini halves in the oven. Remove the zucchini from the oven, fill with the contents of the pan, and cover with the feta cheese. Bake the whole thing in the oven until the feta cheese is lightly browned. Serve with rice.
